L’orge est une céréale très intéressante. C’est une des plus ancienne céréale cultivée. Dans l’Antiquité, elle était consommée sous forme de galette ou en bouillie. L’orge est cultivée à plus de 60 % pour l’alimentation animale, à 40 % pour la production de malt, et seulement à 2 % pour l’alimentation humaine.
Elle subi de nombreuses opérations pour être transformée en malt. Le malt d’orge donne la bière. La création de bière artisanale a le vent en poupe actuellement. Les fabricants de bières sont exigeants sur la qualité de l’orge. Une céréale de qualité supérieure doit avoir une faible humidité, un important taux de protéine et une forte énergie germinative.Les variétés de printemps sont des cultures plus exigeantes mais qui assurent un orge de qualité pour le malt. Le malt d’orge participe également à la production de whisky.
Consommation courante de l’orge dans l’alimentation
L’orge peut se consommer de différentes façons.
Au Tibet, la farine d’orge grillé est l’aliment de base à leur alimentation. Dans les pays du Maghreb, on consomme de la semoule d’orge. Au Japon, il y a de grands buveurs de jus d’herbe d’orge. En effet, dans les années 60, un pharmacien japonais à mis en lumière toutes les vertus de l’orge et depuis le jus d’orge est très utilisé comme complément alimentaire.
